Clear the table and smell the turkey! Thanksgiving is around the corner! During this wonderful time to share delicious food with family and friends, the last thing you’re probably thinking about is your eye health, but many Thanksgiving staples can promote proper eye function. One of our favorites is Dr. Tyson's Pumpkin Sweet Potato Bread! Not only is this dish perfect for Thanksgiving, but also after Thanksgiving when you don't know what to do with your left over pumpkin pie filling and sweet potatoes!

Sweet potatoes contain hearty amounts of beta-carotenoid, as do carrots, collard greens, spinach and romaine lettuce. Beta-carotene is a carotenoid and antioxidant that promotes night vision and overall good eyesight. A cup of cooked, mashed pumpkin contains more than 200 percent of the recommended daily intake of Vitamin A, which is great for your vision, especially in low light. According to the National Institutes of Health, Pumpkins also contain beta-carotene, which the body converts into even more Vitamin A.


Ingredients:


1 cup pumpkin pie filling

1 cup sweet potato pie filling

1/2 cup water

1/2 cup vegetable oil

3 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

Directions:

1. Preheat oven to 325 degrees F (165 degrees C). Grease 2 loaf pans.

2. Mix pumpkin pie filling, sweet potato pie filling, water, and oil
together in a bowl; add flour, baking soda, and baking powder.
Stir well. Pour mixture into the prepared loaf pans.

3. Bake in the preheated oven until a knife inserted into each loaf
comes out clean, about 1 hour.

4. Enjoy!
